Han Sylte in english
Han Sylte is a small scale producer of pesto and marmelade made out of carrots. The firm Han Sylte AS consists of a young couple, Håvard and Mathilde,
which with their two children are located in Bodø, Northern Norway.
Just outside the city of Bodø is a small place called Valnesfjord which Han Sylte has grown very fond of. The village of Valnesfjord are known by their
fantastic carrot, and in Northern Norway Valnesfjord is known as "The carrot-village". Han Sylte are an active part of the harvesting itself as we manly
use carrots that are normally given to the livestock or left on the fields - because of its shape or size. So in order to enshure that the small-, large-,
or "not so beautiful" carrots are treated as normal carrots we participate in the harvest alongside the farmer and his friends. The same goes with the
carrots-greens, which are the main ingredients of our Pesto. We are the only ones except maybe the livestock, that use the carrot-greens.
The farmer , Harald Stokland, is a 75 year old specialist on root vegetables, we often discribe him as a carrot-nerd. He knows everything there is to know
about the carrots wants and wishes, and therefore he is thrilled about the new products of Han Sylte. He brings alot of knowledge and respect into the
firm, and is also spoken of as Håvard and Mathildes latest and oldest friend.
Han Sylte have three different types of marmelade.
1. Klassisk Gulrotmarmelade. Translation: Classic carrotmarmelade. This marmelade brings a taste of carrot, lemon and ginger root, and is made of an old
2. Cognacmarmelade. Translation: Cognac marmelade. Cognacmarmelade contains a rich taste of a famous norwegian cognac called Bache Gabrielsen XO. Although
the alcohol has evaporated in the process, the taste is not to be mistaken. Excellent on all kinds of cheese and also used as a success in desserts.
3. Mørketid. Translation: Darkness-time - a norwegian expression which refers to the time of the year where we don´t see the sun, and it is dark most of
the day. Mørketid is seasoned with cardamom, rose pepper and white pepper. And has a fantastic rich taste, which has made it the most selling marmelade of
Han Sylte also has a pesto made of the carrot-green that go by the name of "Dusken Pesto". Translation: The Tassel Pesto - which referes to the Norwegian
slang-phrase of the carrot-greens. Dusken Pesto is a spicy and exciting addition to any kitchen. Together with freshly squeezed lemon juice, canola oil,
cashew, chili, ginger root, it is surprisingly tasty, and not as dominating as the basil-pesto. Dusken Pesto is however produced in a limited number for
this season, as the product demanded more manhours than Han Sylte was capable of providing. In august 2015, production of Dusken Pesto will start again,
and this time it will be in a much larger number. Dusken Pesto will nonetheless be represented on the Norwegian Stand of Grüne Woche, to give a taste of
the delicious pesto.
Han Sylte is a short traveled product with a clear and firm focus on the enviromental side on food production. Especially as our main ingredients are
commodities normally seen as worthless, and in many farms only left on the fields as fertilizer. However, Han Syltes main focus is quality and taste,
together with eco-friendly perspective. To us quality means to use local commodities, and make food we ourselves would have done anything to get hold of.
